Chocolate Chip Cookies: a Recipe

This is a post from the archives. I wrote this a few years ago and never published it so I decided now is the perfect time to post it! (sorry for the dark photos, at the time I thought it looked good hahaha)
Cookies!!!
Who doesn't love a good cookie? So I had an afternoon to whip up a few, like 6 dozen! Wow, I didn't realize the recipe I was following was a double batch of the original so I made like a ton of these bad boys!

Blue Ribbon Chocolate Chip Cookies
2 1/2 cups Flour
1/2 tsp. Baking Soda
1/4 tsp. Salt
1 cup Brown Sugar
1/2 cup Sugar
1 cup Butter (2 sticks)
2 Eggs
2 tsp. Vanilla Extract
1 cup Chocolate Chips

Preheat oven to 300 degrees.
In a small bowl combine flour, baking soda & salt.
In a large mixing bowl or stand mixer beat brown sugar, sugar & butter.
Add eggs one at a time and vanilla.
Slowly add dry ingredients.
Stir in chocolate chips.
Drop spoonfuls or use cookie scoop onto prepared baking sheet and bake for 21 minutes (depending on your oven).

They are so yummy and delicious!
There were so many I didn't know where to put them all! I need to invest in a dang cookie jar, one that won't let the air in so they don't get all hard. That's one thing I hate about cookie jars....

Valentines

I love giving and receiving Valentines, it is my favorite thing about this holiday! So I wanted to share with you what I did last year for my Valentines.
There is one of the cutest little Etsy shops called Paper + Pip and they create some of the cutest little printables. I was able to get these when they were running a deal on GroupDealz last year.
I just fell in love with all the different designs and the cute little pictures. They are too sweet!
These went together pretty quick.
I whipped up a batch of cookies using Valentine's M&M's instead of chocolate chips.
Purchased these paper CD sleeves and put a little red napkin in each one and then put a cookie inside.
I wrapped the Valentine's I printed out around the cookie sleeve and tied it up with twine.
They are so darling and yummy! I couldn't wait to give them out!

mmmmm

I've made a few things recently that I need to post about!
First off, the Aloha card!
This I made for a friend's wedding reception/baby shower. They were married in December and had a BBQ Luau to celebrate this summer.
I think it turned out super cute I love the palm tree!
So my birthday was earlier this month and I decided to whip up a chocolate cake with strawberry frosting. It was supper yummy!
So here is a great frosting:
Take 1 Strawberry Jello packet and dissolve in a little water or milk then add the powdered sugar, vanilla extract and butter. Tastes great as long as the Jello packet is dissolved otherwise it is very grainy.
It was a very yummy cake, but not very pretty :)
Last weekend I decided to try a new cookie recipe. 
I used a chocolate chip cookie recipe that I have but instead of adding the chocolate chips I added a few chopped up mini-Butterfinger bars! MMMM it was so good!
A couple of weeks ago there was a birthday at my office and one of the girls made these chocolate cupcakes! So I had to snap a few shots!
Doesn't it look delicious!
And the last thing I must share:
D's cake!
He did such a good job on this, he made it all by himself while I was at work then I came home and made some frosting and he decorated it all by himself! I'm so proud of him, it was such a yummy cake!

Blueberry Pies: a Recipe

I made Blueberry Pies this weekend!

And they were delicious!
First I made the CRUST!

2 cups all-purpose flour
I teaspoon salt
1 tablespoon sugar
6 tablespoons butter
6 tablespoons shortening
6 to 8 tablespoons ice water

Warm the butter in the microwave until it is soft, but not melted.
Mix in a large bowl:
2 cups all-purpose flour
I teaspoon salt
1 tablespoon sugar
Then cut in using the dough blender:
6 tablespoons butter
6 tablespoons shortening
6 to 8 tablespoons ice water

Wrap your pie crust in plastic wrap. Then place in refrigerator for 20 or more minutes, while you make the PIE FILLING.


3/4 c. sugar

3 tbsp. corn starch

1/4 tsp. salt
1/2 c. water
4 c. fresh or frozen blueberries
1 tbsp. lemon juice
2 tbsp. butter

In saucepan combine sugar, salt and corn starch with water, blueberries and lemon juice. Cook over medium heat until thick. Remove from heat and stir in butter.

I made mini pies:
Aren't these so cute!!!
The minis baked for 15 minutes each @ 400.

Then I made a regular sized one:
This baked for about 50 minutes @ 400.

Strawberry Lemonade Slush: a Recipe

If you love lemonade as much as I do you will love this simple little treat. If you have a Magic Bullet it will make this so simple but if not a blender will suffice.
You will need.....
frozen strawberries
Country Time Pink Lemonade mix
Ice and water.
for an individual serving in the 'Party Mug':

Strawberry Lemonade Slush
4 frozen strawberries cut in half
1 scoop Pink Lemonade
4 ice cubes
1 cup (or more) water
blend and enjoy


Memorial Day Tags

Memorial Day came and went so fast this year! I had a ton of fun designing and making these sweet little tags for the cupcakes/poppers.
They turned out so great!
And 3 Funfetti cake mixes later......
we had a ton of yummy cupcakes and cake poppers to celebrate!

Brownies: a Recipe

Made these last night! (from here) First time I've ever used baking chocolate and it was pretty fun! All I had to do with it for this recipe was stick it in the microwave and melt it but it was still fun!


One Bowl Brownies

Ingredients
• 4 (1 ounce) squa
res unsweetened chocolate
• 3/4 cup butter
• 2 cups white sugar
• 3 eggs
• 1 teaspoon vanilla extract
• 1 cup all-purpose flour
• 1 cup chopped walnuts

Directions
1. Preheat oven to 350 degrees F (180 degrees C).

2. Microwave chocolate and butter or margarine in large bowl at HIGH for 2 minutes or until butter or margarine is melted.

3. Stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and nuts.

4. Spread in greased 13 x 9 inch pan. Bake for 35 minutes (do not overbake).

Make them, try them, they are delicious!!!

My favorite cookies: a Recipe

I try to bake something at least once a week and I like to try new things each time. But when you get that craving for your favorite cookies you just have to pull out the oats and get baking! These are my most favorite cookies in the world, nothing tops these yummy oatmeal chocolate chip cookies and a tall glass of milk!
Oatmeal Spice Cookies

In a small bowl combine:
1 C Flower
½tsp Salt
1 tsp Baking Soda
1 tsp Cinnamon
½tsp Nutmeg

In a stand mixer add:
¾C Brown Sugar
¾C Chocolate Chips
½C Sugar
3 C Oatmeal
¾ C Butter, softened
1 Egg
1tsp Vanilla extract

Gradually add in flour mixture.
Spoon onto cookie sheet and bake at 350 for 12 mins.
Enjoy with milk!

Make them and enjoy them, they are wonderful!

I was also able to make a few cards this week.
A friend of mine got married last week and so I made a card for them. 
The colors on their wedding invitation were lavender, white and black. Unfortunately I don't have anything lavender at all so I just went with a classic Black and White card. I hope they like it!
I'm so glad I have this wedding stamp set, I've been able to really wear it out this year!

My Uncle's birthday is today so I made him a card this weekend and sent if off in the mail. Boy cards are really hard for me to make. I don't have a lot of stamp sets that are boy and I love to use ribbon which isn't very manly. I think this one turned out really great though even with the ribbon.
The simpler you keep things I think the better when it comes to masculine cards. The over embellishment is what makes them look so girlie I think.
But boys still like the detail you put into a card and appreciate the time and effort to make something just for them. I hope he likes this one!

Mother's Day Cake Poppers

I decided I wanted to try jelly filled cake poppers. There was a little trial and error but I found the yummiest way to make these. I was a little worried that the jelly wouldn't taste very good so I added a little cool-whip to it. Well if you try to make these, the jelly is just fine. In fact, it's better without the cool-whip. All you need is a yummy frosting. Oh and with the white cake, they taste better after they have cooled, don't try them hot out of the oven, you will be disappointed.
Here is how they turned out!
Just a little white cake mix, baked in the mini-cupcake pan. Cooled then cored and filled with Raspberry jelly. Frosted with a little homemade vanilla frosting and finally sprinkled with pretty sugar sprinkles.

Baby Card & Cookies


Last weekend I had a baby shower card to make. I do not have any baby type stamps, so I was a little worried. The baby is a boy so I pulled out my western stamp set and used this as inspiration and this is what I came up with.
I think it turned out pretty well.
And the inside is really cute too!
I had a lot of fun baking new cookie flavors too! I grabbed a bag of Reese's chips and made the recipe on the back of the package. It was so yummy!

If you have never tried these before, go ahead and make a batch for yourself!
I've been waiting to try to make M&M cookies and I got my chance the other day! They were really good too!


I sure love cookies! They are so much fun to make I can't wait to try another new recipe.

Very Productive

This was such a great weekend! The weather was awesome, I spent a ton of time outside with the puppies, and got a lot of fun stuff done!
It was my Aunt's birthday on Saturday so I made a card for her. I love it!
I went over to Stamping 411 to use their sketch! These are so much fun to do, it makes creating a great card super quick, cute and easy! I love how it turned out! The blue is really pretty together. I really need to get some new stamp sets though, I only have a few I can use for birthdays and I feel like they are getting worn out.
The thing I love most about this card is how it opens. I had 2 pieces of the dark blue and I really didn't want to cut a brand new piece so I decided I would clip them both together and it can slide open. I love it! I've never done one like this and it's super cute!
I purchased some awesome, very 'loud' fabric the other day to redo our kitchen chairs. The chairs are great, and perfect for our place. They were covered with a cream microfiber fabric. It's nice and neutral, matched really well but I wanted something a little more bold.
So after a trip to Home Depot to get a staple gun and a drill (so excited for the endless possibilities with both these purchases) we came home and I got to work. This took me about 45 minutes to complete. Ironing was the most time consuming part of this whole makeover. I am happy to introduce you to this wonderful new set of chairs! So what do you think?
I am totally in love with these now! Before when I would walk into the kitchen I didn't really notice the chairs unless they weren't pushed in property. Now I walk around the corner and I am a little surprised every time! It makes me so happy! And it was so much fun and easy! This makes me excited to tackle my big reupholstering project but that still wont be for a while.
Ahhhhhh so beautiful!!
I also snuck in a little baking this weekend! I just love to make yummy treats!
Danny bought me a mini muffin/cupcake pan a couple weeks ago and I've just been dying to try it out! We had a Funfetti cake mix in the pantry so I pulled it out and threw them together. Made some basic frosting and added a little blue food coloring. I think I liked them a little better without the frosting but either way these little cake poppers are so yummy! You could throw down quite a few very easily! And we sure did, they go really fast!
